Well it is that time of year when we have more broad beans than we know what to do with, If you are like me and you grow a heap of broad beans because they are easy to grow and produce abundant yeilds but find plain old boring boiled broad beans unpalatible maybe try this:
Broad bean egg slice:
Fry up a goodly amount of equal parts roughly chopped brown onion and bacon with a dash of olive oil to get the bacon to start to render. When the bacon and oinions are approaching your desired level of cookedness (if thats not a word it bloody well should be) add the broad beans and saute for 5 min so they take on the lovely bacon and onion flavour in the bacon grease.
In a bowel whisk some eggs (I use 6) and stir through a cup of your favorite grated cheese, season with salt and pepper and then mix in the content of your fry pan (bacon, onion, broad beans and all the bacon grease) and add some torn basil leaves if you have them. Once well mixed you will have a fairly runny mixture with all that oil and eggs so slowly and in small batches sift and mix in self raising flour until the mixture has the consistancy of cake batter.
Pour into a greased tin and bake at 180C for 30min, should be brown on top, do the knife test to make sure it is cooked all the way through.
Better hot but can be eaten cold.
