I don't know about you guys but I have Eggplant (Aubergine) coming out of my ears at this time of year, so I turned my eggplant glut into 2kg of Kasundi using this recipe

Pretty damn yummy too, even if I do say so myself!
I substituted half the cumin seeds with carroway seeds, and I wouldn't use as much sugar next time as the jar went straight into the fridge so didn't need the preservative nature of the sugar so much and it is quite sweet.

We too have had eggplant coming out of our ears and I turned some in to pickled eggplant. First I salted and then drained and squeezed, then soaked in vinegar and bottled in oil with chili and herbs and garlic. Let for 1 week and mmm yum, needs a little more vinegar but pretty easy and tasty.
